Review #360 - Tomatin 12 Year Cuatro Series: Pedro Ximenez

Another member of Tomatin's Cuatro series, in which the effects of different sherry finishes are compared: here's the PX version. It was distilled in 2003 (January 15th, specifically), and then it spent a little over 8 years maturing initially, probably in ex-bourbon casks.

Then, on June 29, 2011, the spirit was transferred to Pedro Ximenez sherry casks, where it spent another 3+ years, eventually being bottled in 2015. The total time of aging is more than 12 years, and the yield was 2,000 bottles for this outturn.

Details: Distilled in 2003, bottled in 2015; 2,000 bottles

Tasting Methodology: Reviewed 1 time; bottle at 30% fill level at time of review. Tasted in a Glencairn glass, rested 10-15 minutes

Nose: Lighter fruits - golden apple, golden raisin, oranges. There's a musty character to it, like an old cask, and then we get a little bit of dark fruit like blackberry. Clove hints at some baking spice, and with time, that musty character grows stronger.

Palate: A medium mouthfeel; the musty, old school cask notes from the nose transition to the palate. Rich apples, cinnamon, and poached pears, and then it moves toward orange and red fruits: unripe strawberries. Soft baking notes of toasted bread linger at the top of the glass.

Finish: Medium length, with some sweetness from brown sugar and simple syrup; golden apple returns, as does cinnamon, and there's a soft spirity kick at the end.

Final Note: Tasty whisky, and while there are hints of the PX influence, it definitely isn't overwhelming. Lots of orchard notes - the poached pear flavor was especially nice, and generally, this was a sweeter whisky overall. We also liked the musty character on the nose - a reminder of an older style of spirit.
