The Barton 1792 Distillery is one of the oldest distilleries in Bardstown, Kentucky -they claim to be the oldest that has been continuously operating in the city full of bourbon history. Their Full Proof bourbon is bottled at 62.5% ABV (125 proof), which represents the barrel entry proof; for maximum flavor delivery, they choose not to chill filter the bourbon, a process which most whiskies under 92 proof undergo.

The Wiseguy Lounge has created a series of these 1792 Full Proof single barrel picks, which they have chosen to name after characters in the cult classic film 'Reservoir Dogs.' This first single barrel that we're reviewing is named for Mr. White; it comes with the standard bottling strength for 1792 Full Proof, and no age statement on the bottle, though the bar disclosed that it was aged for 6 years.

Tasting Methodology: Reviewed 1 time; bottle at 60% fill level at time of review. Tasted in a nosing glass, rested 10-15 minutes

Nose: This is leaning a bit sweet - brown sugar, even some raspberry jam, a bit sugary. There is some oak as well, especially dusty oak; with time, it becomes more balanced. It's a relatively simple nose.

Palate: The mouthfeel is medium-thick, full of oaky spice, especially black pepper and tannins. There's also some vanilla, adding a lighter side, before sweet red fruit like cherry pops forward; with time, it becomes a more medicinal cherry. Nicely warming, with that mix of sweetness and spice.

Finish: The warmth continues, and the oak spices grows more. Cinnamon, tannins, soft pepper, plenty of woody notes; that cherry from the palate is still present but much softer, and in the aftertaste, it's all spicy notes. It's a medium-long finish.

Final Note: This is a nice barrel pick from the Wiseguy Lounge and 1792 - a little simple, but we enjoyed the mix of sweet and spicy notes, and the cherry flavors especially were our favorite part. This was also a bourbon which drank under its proof point - warming, but not too hot.

Value is pretty decent, as well - these 1792 bourbons can offer better value than a lot of competing brands if you can find them, and this bottle is no exception.
