Eddie Cabot, known as Nice Guy Eddie, is the Reservoir Dogs character that this single barrel bourbon takes its name from. It's another 1792 Full Proof, bottled at 125 proof, hailing from the Barton distillery in Kentucky - this is a part of the Reservoir Dogs series of single barrel picks made by the Wiseguy Lounge, a speakeasy-styled bar.

Our previous experiences with the 1792 brand gave us some red fruit notes and a stronger oak influence than their ages might have suggested at first glance; will this unchill-filtered bourbon continue that theme?

Tasting Methodology: Reviewed 1 time; bottle at 80% fill level at time of review. Tasted in a nosing glass, rested 10-15 minutes

Nose: A great old polished oak note to start - dusty, a little sweet, quite mature. The nose is all about oak notes, really, though a bit of a candied pecan scent also wafts in with more air time.

Palate: A medium-thick mouthfeel; warming from the strength, but also a blast of juicy, syrupy dark cherries. More red fruit - candied strawberries, and the sweet notes continue with brown sugar, even molasses. The spice kick and oak is more subtle in the palate - this is focused on dark fruits. Very nice palate.

Finish: Syrupy grape at the beginning, but the oaky notes return in this finish - tannins and dusty old wood, almost like antique furniture. In the aftertaste, dark purple fruit like raisin lingers.

Final Note: This is a great pick from 1792 and the Wiseguy Lounge - it's all about that dark red fruit flavor profile. It definitely leans more sweet, though we don't mind in this case; texture and viscosity are great at this proof point, too. As we've seen with a couple of other 1792 picks, the oak profile is more mature than expected at this age.

Value is also very good - this is one of the better bourbons that we've tasted that falls in the $70 to $80 price range. If you have a chance to try this or purchase a bottle at a Wiseguy Lounge location, we would recommend giving it a chance.
