Review #510 - Still Austin Straight Bourbon
Still Austin's core bourbon product - this straight bourbon with a 2 year age statement - is also called 'The Musician' based on the art on the label. The label art on the distillery's bottles are designed by local artists - for their core range, including this bourbon, Austin-based Marc Burckhardt painted the originals.
This Texas straight bourbon has a mashbill of 70% white corn, 25% rye, and 5% malted barley. These are all Texas-grown grains, and after the mashing and fermentation is complete, the spirit is distilled in Still Austin's 42 foot tall column still. The back label shows a minimum age statement of 2 years, although that seems to generally be a standard statement across Still Austin releases - it's possible that this contains some older bourbon, as well.
Still Austin Straight Bourbon
USA - Bourbon
Price: USD 43 (2025)
Age Statement: 2 Years
Strength: 49.2% ABV
Tasting Methodology: Reviewed 3 times over 2 months; bottles at 100%, 60%, and 30% fill levels at times of review. Tasted in a nosing glass each time, rested 15+ minutes
Nose: Rich and oaky, but nicely rounded - hints of barbecued wood, red and orange fruit, mild leather. There's a sweet side coming from brown sugar and bruleed white sugar, even cream soda; the oak takes on a darker complexion with time.
Palate: A medium thickness mouthfeel; oaky and smoky, but still a bit rounded - nothing too daring. Molasses and cola add sweetness, but we also get rye spice: fizzy peppermint and cinnamon. With more time, lighter fruits appear: pineapple, banana, maybe orange peel.
Finish: Slightly effervescent as we transition from the palate, and the spice gets stronger - cinnamon, oak, and then a little bit of chocolate. Menthol and wood smoke combine with caramel; it's a medium length finish, and the aftertaste brings orange soda.
Final Note: This is an interesting bourbon, although none of the individual tasting sessions brought a ton of complexity - instead, the flavor of this bourbon seemed to change over the weeks, so each session was different. There was a nice variety overall, though, and while the strength isn't too high, it's enough for a pleasant mouthfeel. Solid bourbon, better than most entry level bottles.
Value is pretty good, too, as the price on this Still Austin bourbon is reasonable - just over $40. If you can get it under $50, we think it's definitely worth a buy.
Our Average Rating: 6.5 / 10
In the current whisky landscape of increasing prices and variable quality, we've added a value rating to our reviews that relates to the score and the available pricing of each whisky. This roughly equates to a 0-10 scale; no reviews so far have exceeded a score of 10, although it is technically possible for the formula to produce a value rating higher than 10 with a high enough score and low enough price.
